Nduja

I have just tried a tasty spreadable sausage called nduja, but what is it made of?

Nduja is a spicy sausage to spread over bread or toast. It is made with pork meat, pork fat roasted hot red peppers, and a mixture of spices. It is a Calabrian variation of salami and it could be considered a spicier version of Mallorcan sobrasada. Nduja is somehow based on the French andouille, where its name comes from.

Eat it on toast, or use it as cooking ingredient, adding nduja to pasta, as an example.. Try spreading some over slightly toasted bread and place it under the broiler / grill for a few minutes until the sausage browns.
