Tomato gnocchi

This recipe is based on the one for gnocchi with spinach; to take a step up from those spinach gnocchi, try the tomato ones.

Ingredients

1 cup spinach
5 ounces gnocci
1 ounce cheese (Romano cheese)
1⁄3 cup tomato sauce
2 tablespoons olive oil
1 pinch sage
1 clove garlic (crushed)

Instructions

  1. Mix the spinach 1/3 cup tomato sauce and then puree to desired consistency; add a little water, if necessary. Simmer in a pan for about 5 minutes.
  2. Steam the gnocci by sprinkling them with water and placing into the microwave for 1 minute. Then mash the gnocchi until they're broken down, but still lumpy. Add olive oil and toss.
  3. Mix the spinahc and tomato sauce with the gnocchi, Crush the garlic and sprinkle on, then put into the oven for a few minutes to warm.
  4. During the last 30 seconds, sprinkle on the sage and Romano cheese.

Notes

For a delightful addition, add a few slices of porcini mushrooms to the spinach and tomato sauce before simmering.
