Tansy pudding
Tansy Pudding is typically served on Beltane, Midsummer and Ostara. Hang tansy over your entryway door to prevent evil from entering the house.

Bring the milk and butter to a boil then pour over the breadcrumbs, set aside and allow the mixture to settle for 30 minutes.
Beat together the sugar, tansy leaves, eggs, then, fold into the breadcrumb mix.
Pour into serving dishes and bake at 350° F until the pudding sets.
Remove from heat, allow the pudding to cool, extend a layer or lemon gelatine or lemon curd on the top, if using, and place in the refrigerator until thoroughly chilled.
Notes
Serve with cream and honey.
Preparation time does not take into account standing time.
Variations
Substitute 2 medium sized egg with 3 large egg yolks for a more yellow color.
Should you want to make a pudding without tansy, substitute 2 tablespoons of chopped tansy leaves with 2 tablespoons of seedless raisins.
