Sweet potato souffle with marshmallows

Sweet potatoes inspire sweet dishes as well as savory ones. This is a warm souffle one can serve as appetizer or dessert.

Ingredients

5 sweet potato (medium sized)
3 T butter
1⁄4 t salt
1⁄2 t pepper (white)
  marshmallow (to taste)
1 T cream (heavy cream, couble cream)

Instructions

  1. Steam the sweet potatoes, then remove Peel.
  2. Using a large bowl, mash the sweet potatoes until smooth.
  3. Mix in the baking powder, salt, pepper and butter. With a wooden spoon, beat in the cream.
  4. Place the mixture into an oiled casserole dish and cover the top with marshmallows, to taste.
  5. Bake at 350° F until the marshmallows are golden brown.
