Skillet granola

Delicious for breakfast, as snack or as base for dessert. Serve with sliced fruit or fruit salad, and milk or yogurt.

Ingredients

3⁄4 cup almond (no shell or skin)
2 tablespoons coconut (dessicated coconut)
1 pinch cinnamon
2 tablespoons honey
1 tablespoon cooking oil
1 cup oats (rolled oats)

Instructions

Heat a skillet, add the almonds or nuts when it is warm, reduce heat and toast for 1-2 minutes, until golden brown. Incorporate the coconut, stirring or shaking the pan to distribute it evenly. Add oats and cinnamon and toast for 2-3 minutes.

Drizzle the oil and honey over the toasted oats. Stir until well mixed and cook for 2-3 minutes.

Distribute among 4 bowls, add fruit and milk, or fruit salad and yogurt, and enjoy.

Notes

For a more exotic flavor, add a little cardamom. For a more homely flavor, try 2-3 drops vanilla extract. Substitute almonds with nuts, hazelnuts, pecans, cashews, or mixed nuts. Chopped nuts toast really quick, be careful is using them.

Coconut oil adds extra coconut flavor, but any other vegetable oil - sunflower, corn, rapeseed, olive oil - will work just as well.

The granola will not get crispy until cooled down. It will get crunchy with cold milk or yogurt.
