Oyster ketchup

This ketchup goes well with fish and seafood.

Ingredients

1 pint oyster (oysters enough to fill 1 pint container)
1 pint sherry
3 ounces salt
1⁄4 ounce mace (powdered)
1 pinch cayenne pepper (ground)

Instructions

  1. Scald the oysters in sherry, strain.
  2. Using a mortar and pestle, grind the oysters, salt, cayenne and mace into a pulp. Add the sherry.
  3. Boil 5 minutes, skim well.
  4. Pass trough a sieve.
  5. Allow to cool.
