Midwest stuffing

From the heartland of the U.S.A. comes this delicious stuffing recipe suitable for turkey, goose and other fine fowl.

Ingredients

1 pound bacon (better smoked)
1 pound sausage (sausage meat)
1 egg
1⁄2 pound bread crumbs
1 package chestnut (about 1/2 pound)

Instructions

Cut the bacon into small squares and fry them until they're just on the edge of crisp. Drain excess grease. Repeat with the sausage.

For the chestnuts, remove the skin and chop the chestnuts into fine pieces.

Mix all the ingredients together in a bowl and add the egg, stirring well.

Cook at 350°F (177°) in the oven for about 45 minutes. Alternatively, the stuffing can be added to the bird before it goes into the oven.

Total time
1 hour, 10 minutes
Cooking time 45 minutes
Preparation time 25 minutes
Yield
12 servings

Notes

You can purchase bread crumbs in a bag or make them easily by separating bread slices into 1/2 inch squares.

Roasting the chestnuts will add an extra full flavor to the final result. A roaster is ideal but they can be baked for 5 minutes at 375°F (190°C), if needed.
