Kale and apple slaw with creamy honey mustard dressing

This is a delicious and healthy kale salad with apples that combines the earthy flavors of kale with the sweetness of apples and red onion, enhanced by the tanginess of a creamy honey mustard dressing. 

Ingredients

4 cups kale (kale leaves, stems removed, finely chopped)
2 apple (cored and thinly sliced or julienned)
1⁄4 cup onion (red onion, thinly sliced)
1⁄4 cup cranberry (optional, dried cranberries or raisins)
1⁄4 cup almond (optional, toasted almonds or walnuts)
1⁄4 cup yogurt (Greek yogurt)
1 tablespoon honey (or to taste)
2 teaspoons mustard (Dijon mustard)
1 tablespoon vinegar (apple cider vinegar)
1 tablespoon olive oil
  seasoning (salt and ground pepper to taste)

Instructions

Prepare the slaw ingredients

Wash and dry the kale. Remove the stems and finely chop the leaves.

Core the apples and slice them thinly or julienne them.

Thinly slice the red onion.

Make the dressing

In a small bowl, whisk together the mayonnaise (or Greek yogurt), honey, Dijon mustard, apple cider vinegar, and olive oil until smooth and well combined.

Season with salt and pepper to taste.

Assemble the slaw

In a large mixing bowl, combine the chopped kale, sliced apples, red onion, dried cranberries (or raisins), and toasted nuts (if using).

Pour the dressing over the slaw ingredients and toss well to coat everything evenly.

Serve

Let the slaw sit for about 10-15 minutes before serving to allow the flavors to meld.

Serve as a side dish or enjoy it on its own as a light meal.

Notes

You can use a mix of red and green apples for color.

Variations

For a creamier txture and more flavor, substitute Greek yogurt with the same amount of mayonnaise.
