Kale and apple slaw with creamy honey mustard dressing

This is a delicious and healthy kale salad with apples that combines the earthy flavors of kale with the sweetness of apples and red onion, enhanced by the tanginess of a creamy honey mustard dressing. 


4 c kale (kale leaves, stems removed, finely chopped)
2 apple (cored and thinly sliced or julienned)
1⁄4 c onion (red onion, thinly sliced)
1⁄4 c cranberry (optional, dried cranberries or raisins)
1⁄4 c almond (optional, toasted almonds or walnuts)
1⁄4 c yogurt (Greek yogurt)
1 T honey (or to taste)
2 t mustard (Dijon mustard)
1 T vinegar (apple cider vinegar)
  seasoning (salt and ground pepper to taste)


Prepare the slaw ingredients

Wash and dry the kale. Remove the stems and finely chop the leaves.

Core the apples and slice them thinly or julienne them.

Thinly slice the red onion.

Make the dressing

In a small bowl, whisk together the mayonnaise (or Greek yogurt), honey, Dijon mustard, apple cider vinegar, and olive oil until smooth and well combined.

Season with salt and pepper to taste.

Assemble the slaw

In a large mixing bowl, combine the chopped kale, sliced apples, red onion, dried cranberries (or raisins), and toasted nuts (if using).

Pour the dressing over the slaw ingredients and toss well to coat everything evenly.


Let the slaw sit for about 10-15 minutes before serving to allow the flavors to meld.

Serve as a side dish or enjoy it on its own as a light meal.

You can use a mix of red and green apples for color.


For a creamier txture and more flavor, substitute Greek yogurt with the same amount of mayonnaise.

You can customize this recipe by adding other ingredients like shredded carrots, cabbage, or even roasted pumpkin seeds. Adjust the dressing ingredients to your taste preference.
