Indian masala

This masala is the most common for dosa, the Indian pancakes. For those who love to make everything from scratch themselves, here's how.

Ingredients

2 potato (peeled)
2 onion (sliced)
1 tablespoon coriander (seeds)
4 cashew nuts (halved, then chopped)
1⁄2 teaspoon cumin (seeds)
1⁄2 teaspoon mustard (seeds)
1⁄4 teaspoon turmeric (ground)

Instructions

Toast the coriander,cumin and mustard seeds, then crush. Boil the potatoes for 10-20 minutes, depending on size, until cooked then chop finely. Mix all the ingredients together then add to the batter.

Notes

Masala is nothing more than a seasoning mix. This is not the only recipe for Indian masala, as different recipes used different masala mixes. Have you heard about garam masala? This is the typical mix for curry.
