Country style potatoes

Potatoes cook in a few minutes, literally, in the pressure cooker.


1⁄4 lb mushroom (fresh musrooms, stems trimmed, sliced)
1⁄2 c onion (finely chopped)
  seasoning (salt and pepper to taste)
1⁄2 c water (or chicken stock)
4 c potato (cut into 1/2 inch slices or cubes)
2 T parsley (fresh parsley, finely chopped)


In the pressure cooker, heat the oil and sauté the mushrooms and onions until the onions are wilted.

Mix in all the remaining ingredients.

Lock the lid and bring to pressure. Lower the heat and cook for 3 minutes at 15psi.

Allow pressure to drop by quick release or auto release method and remove lid.

If using chicken stock prepared from a stock cube or ready made, make sure it is gluten free.
