Cold and spicy tomato soup
Serve this spicy tomato soup chilled with crusty French bread for a refreshing summer lunch.
Ingredients
3 c tomato juice
1 onion (finely chopped)
3 tomato (chopped)
1 bell pepper (chopped, seeds removed, diced)
2 clv garlic (minced)
1 cucumber (peeled and diced)
2 T lemon juice
2 T vinegar (red wine vinegar)
1 t basil (fresh basil, finely chopped)
1⁄4 t cumin (ground)
1 t tarragon (frehs tarragon, finely chopped)
2 pn cayenne pepper
2 T olives
hot pepper sauce (to taste)
Instructions
Mix all ingredients in a large bowl.
Place half of the soup mixture in a blender and process until smooth.
Combine with the other half of unblended ingredients.
Chill in the refrigerator for a few hours.

Notes
If you prefer a smooth texture, process all the ingredients in the blender. This recipe is a heavily spiced variation of gazpacho.
