Chocolate pudding

This recipe uses just a few basic ingredients you probably already have in your cupboard, but tastes so much better than packaged chocolate pudding.

Ingredients

1⁄3 cup sugar
1⁄4 cup cornstarch
2 2⁄3 cups milk (whole milk or half fat)
1 teaspoon vanilla extract
3 tablespoons cocoa (cocoa powder)

Instructions

Combine the cornstarch with 1/4 cup of the milk in a small bowl.

Mix until smooth and set aside

Combine the sugar, cocoa powder and 1/4 cup of the milk in a sauce pan.

Mix until smooth.

Add the rest of the milk and the cornstarch mixture to the pan.

Heat over medium heat, stirring constantly; bring to a boil.

Boil for one minute. Remove from heat and add the vanilla.

Using a ladle, pour pudding into four small serving dishes and chill in refrigerator until set, about two hours.

Notes

Chocolate pudding is really a thick chocolate sauce.

Variations

Place some cake or cookie at the bottom of the serving dish before pouring the chocolate pudding.

Garnish with whipped cream and toasted nuts.

Fill half with vanilla custard half with chocolate pudding for a layered dessert.
