Candied sweet potatoes

An example of sweet potatoes in a sweet dish.

Ingredients

3 tablespoons butter
1 tablespoon lime juice
1⁄3 cup brown sugar (dark brown sugar, packed)
1 tablespoon brandy
1 lime (grated rind only)
1 1⁄2 pounds sweet potato (peeled and diced)

Instructions

  1. In a large saucepan, cook the sweet potatoes in boiling water for 5 minutes. Remove with a perforated spoon and allow to drain.
  2. Using a large heavy bottom frying pan, melt the butter. Add the lime juice and brown sugar. Heat to dissolve the sugar.
  3. Stir the potatoes and brandy into sugar mix. Cooking over a low heat for about 10 minutes until the potato slices are throughly cooked
  4. Sprinkle the lime rind over the top of the sweet potatoes, mixing well.

Notes

Place the cooked swwet potatoe on your serving plate, garnish with lime wedges and serve.
