Buckwheat pancakes

Buckwheat is a seed, although it is used as if it was a cereal, and it does not contain gluten. Try these pancakes for a gluten free breakfast.

Ingredients

1⁄4 cup flour (gluten free flour mix)
2 teaspoons baking powder
1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
2⁄3 cup milk
2 teaspoons sugar
1 egg
1 teaspoon vanilla extract
1⁄4 teaspoon cooking oil
1⁄2 cup flour (buckwheat flour)

Instructions

Combine the flours, sugar, baking soda, baking powder and salt in a large mixing bowl.

In a separate small bowl, whisk together the milk, egg, vanilla extract and oil. Then add the wet ingredients to the dry ingredients and whisk well. Set aside for a few minutes.

Heat a non-stick frying pan and spoon in some batter with a ladle. Brown each pancake on both sides.

Serve immediately with cut up bananas drizzled with pure maple syrup.
