Broccoli Asian style

This recipe also works well with green beans, asparagus, snow peas, red peppers and a mixture of them.

Ingredients

2 T cooking oil (sesame, peanut, olive oil or vegetable oil)
1 clv garlic (large, peeled and crushed)
1 pce ginger (fresh ginger, about 1/4 inch, peeled and grated)
1 hd broccoli (cut into flowerets)
6 T water
  seasoning (salt and pepper to taste)

Instructions

In the pressure cooker, heat the oil until very hot. Stir fry the garlic and ginger until the garlic is golden. Add the broccoli and stir fry until it's bright green.

Sprinkle with salt and transfer the broccoli to the pressure cooker steamer basket.

Pour the stock and soy sauce into the bottom of the pressure cooker and lower the basket into it.

Lock the lid in place, bring to pressure, then lower the heat and cook for 2 minutes.

Release pressure using the quick release method or the auto release method and remove lid.

Remove the basket and serve using some of the soy sauce liquid.

Notes

You can substitute water with gluten free vegetable stock for more flavor - or gluten free chicken stock, if not a vegetarian. You will need to add less salt than usual because the soy sauce already has salt.
