Blackened chicken

This is a low fat and low carb chicken recipe, suitable for people on a weight loss diet.


1 t paprika
1⁄4 t salt
1⁄2 t cumin (ground)
1⁄2 t thyme (dried or ground)
1⁄4 t pepper (white pepper)
1⁄4 t seasoning (onion powder)
4 pce chicken (chicken breast, skinless and boneless)
  cooking oil (olive oil is our favorite)


Prepare the rub by mixing all the spices: paprika, salt, cayenne pepper, cumin, thyme, white pepper, and onion powder.

Rub the mixture on chicken breasts and stand for at least 30 minutes.

Heat the grill and grill chicken breasts for 25-30 minutes, depending how thick they are, turning once.

Remove from heat and serve.

Serve with a green salad.

Store leftover rub in an aritight container. It can also be prepared in advance.
