Autumn chutney

This is not your ordinary apple chutney, but it brings together the flavors of the fall season.

Ingredients

8 cups apple (tart apples, pared, cored and chopped, about 10 medium sized apples)
1 cup onion (chopped)
1 cup bell pepper (sweet red peppers, chopped)
2 tablespoons chili pepper (red chili, seeded and finely chopped, about 2 whole )
1 garlic (minced)
1 1⁄2 pounds raisin
4 cups brown sugar (firmly packed)
2 tablespoons ginger (ground)
2 tablespoons allspice (ground)
2 teaspoons salt
4 cups vinegar (5% acidity)
4 tablespoons mustard (mustard seed)

Instructions

  1. Mix all ingredients together in an 8 qt saucepan and bring to a boil. Reduce heat simmer uncovered for 2 hours, or until the mix is thick and a deep brown in color.
  2. Stir the mix occasionally in the beginning, stir constantly towards the end.
  3. Pour into 4-5 pint jars.

Notes

Serve with melted Brie for a perfect treat.
