Hot ginger sauce
This thick, dark, rich & spicy sauce goes well with as a dipping sauce with bland foods such as tofu.
Ingredients
1⁄4 c ginger (fresh, fiinely chopped)
1 chili pepper (stemmed, finely chopped)
2 T vinegar (rice wine vinegar)
1 T garlic (minced)
1 T sugar
1 T soy sauce
3 spr coriander (fresh leaves, finely chopped)
2 T bean paste (brown bean paste)
Instructions
- Mix all ingredients thoroughly.
- Use immediately.

Notes
Use immediately or at least within 6 hours of preparation as the flavors will get stronger the longer the sauce sits.
