Carolina's rockin red sauce
A delicious barbecue sauce from North Carolina.This marinade was the runner up for the Seasonal Recipe contest with the topic Complement your Barbecue, promoted by Food Naturally
Ingredients
1 c canola oil (or other vegetable oil)
12 T tomato ketchup (Melinda recommends Heinz tomato ketchup)
12 T soy sauce
4 T vinegar (apple cider)
2 t brown sugar
1 t pepper (freshly ground black pepper)
3 t garlic (minced)
1 t cumin (ground)
Instructions
- In a 13x9 inch baking dish add oil, ketchup, soy sauce, vinegar, sugar, pepper, garlic and cumin whisk well.
- Add the London broil or any beef or chicken, pork or fish to the mixture using a fork poke many holes in roast and continue to roll on both sides until completely covered.
- Now cover the meat with plastic wrap and refrigerate for around 4 hours; however, overnight is best. Be sure to turn every so often to marinate both sides.
- Place meat on a hot grill and grill as usual.

Notes
Veredict: flavorful and deliciously sweet, still with some zing. This marinade will appeal to people who does not relish hot sauces, definitively a winner.
