The Roman "sugar" that was slowly poisoning its drinkers
The Romans had a problem with their wine. Without modern production, a great deal of it turned sour, and much of what didn't was harsh and tart to the taste. They also had very little to sweeten it with. Cane sugar was effectively unknown in Europe, and honey — the one good sweetener they had — was expensive and never in large enough supply. So they turned to the grape itself, and in doing so stumbled into one of the most quietly catastrophic culinary habits in history.
The solution was a thick, dark grape syrup. Made well, it was genuinely useful: it sweetened sour wine, preserved fruit, and enriched all manner of dishes. Made the way the Romans most often made it — boiled down in pots of lead — it was also slowly poisoning the people who drank it.
Sapa and defrutum: grape syrup by the potful
The technique itself was sound and is well documented. Roman writers on agriculture and cookery — Cato the Elder, Columella, and Pliny the Elder among them — described boiling down unfermented grape juice, known as must, to concentrate its natural sugars into a sweet syrup. The names depended on how far you took it: reduced to two-thirds of its original volume it was carenum, to one-half defrutum, and to one-third the thick, intense sapa.
This syrup was everywhere in Roman cooking. It sweetened and rescued sour wine, it preserved quinces and melons through the winter, and it turned up as a sweetener and flavor-enhancer across the Roman kitchen. The syrup appears throughout Apicius, the oldest surviving Roman cookbook, which gives a sense of just how routine an ingredient it was. In an age before refrigeration and before reliable sugar, something that sweetened, preserved, and stabilized food all at once was enormously valuable.
Why lead made it sweet
Here is where the trouble began. The Romans very often boiled their grape syrup in vessels made of lead, or of lead alloys, rather than copper or bronze — partly because lead was cheap and easy to work, and partly because cooks had noticed that lead pots produced a sweeter, smoother result than other metals.
They were right that it tasted better, and they had no way of knowing why. Grape juice is mildly acidic, and during the long, slow boil that acid reacted with the lead of the pot to produce a compound we now call lead(II) acetate. It happens that lead acetate genuinely tastes sweet — which is why it later earned the name "sugar of lead." That sweetness was not the grape. It was the pot dissolving, very slightly, into the syrup.
This is the cruel twist in the whole story. Most poisons are bitter, and bitterness is one of the body's oldest warnings that something is unsafe to eat. Lead acetate is one of the rare exceptions: a poison that tastes pleasant. Every signal a Roman cook had told them the lead-boiled syrup was the best one. Every signal was wrong.
How much lead, and how much wine
The scale of it is what makes the story genuinely alarming rather than merely curious. Wine was central to Roman life, and among the wealthy the quantities were considerable — well-off Romans might drink the equivalent of two liters a day, usually diluted with water, and lead-sweetened syrup was folded into a great deal of it. It was also, being a mark of a well-appointed table, something the elite served freely to show their status.
In the 1980s, the geochemist Jerome Nriagu tried to put numbers to it. Using surviving Roman recipes, he recreated sapa in lead vessels the way the Romans would have and measured what came out. He found that the syrup contained a perilous concentration of lead, ranging from 240 to 1,000 milligrams of lead per liter — a level so high that, by his estimate, a single teaspoon could be enough to cause chronic lead poisoning over time. Lead is slow and cumulative: the body clears it only gradually, and it builds up in the bones and blood, seeping to the organs over years. The symptoms of chronic exposure — anemia, kidney damage, nerve and cognitive problems, infertility — arrive quietly and are easy to attribute to something else.
Did it help bring down Rome?
This is the question the story always seems to arrive at, and it deserves an honest answer rather than a dramatic one.
The idea that lead poisoning caused the fall of the Roman Empire is a real hypothesis, and it has been argued seriously — most prominently by Nriagu himself, who suggested that chronic lead exposure among the ruling class could have contributed to the Empire's decline. It is a striking theory, and it is easy to see why it has stuck.
But it is not an established fact, and most historians are skeptical of it as an explanation for something as vast and complicated as the collapse of Rome. The decline had many causes — political, military, economic, and demographic — unfolding over centuries, and singling out any one ingredient as the culprit asks far more of the evidence than it can bear. We know the Romans were exposed to a great deal of dietary lead, and we know that lead is genuinely harmful. Drawing a straight line from a syrup pot to the fall of an empire is a much longer leap, and a contested one. The safer and more interesting truth is the one we can actually stand behind: an entire civilization ate a slow poison for centuries because it tasted good, and because nothing in their experience could tell them otherwise.
The reason we take lead so seriously now
Sugar of lead did not vanish with Rome. It reappeared through the centuries — medieval alchemists knew it, and it was still being used to illicitly sweeten cheap wine as late as the 18th century, by which point its dangers were increasingly understood and its use increasingly criminal. Only with modern chemistry did the full picture become clear, and lead acetate was finally abandoned as a sweetener for the obvious reason.
The Roman experience is, in a sense, the original cautionary tale behind the way we now treat lead — in pipes, paint, fuel, and food containers — with such seriousness. It is a reminder that the sensory pleasures of food and drink are not a reliable guide to their safety, and that some of the most dangerous mistakes are the ones that taste perfectly fine going down.
