Vegan dark chocolate mousse

A vegan dark chocolate mousse made with aquafaba is a delicious and guilt-free dessert that will satisfy any sweet craving. It is a rich, creamy, and indulgent mousse that is low in fat and calories, and high in fiber and antioxidants. It's a perfect dessert for those who are vegan or looking for a healthier option that doesn't skimp on taste.

Ingredients

3⁄4 cup aquafaba (no salt or low salt)
1 teaspoon lemon juice (optional)
3⁄4 cup chocolate (chopped dark chocolate)
1⁄2 cup sugar (white sugar)

Instructions

Melt the chocolate bits in a double boiler or microwave, Let them rest.

In a large bowl, whisk the aquafaba, sugar, and lemon juice, if using, until the mixture forms stiff peaks.

Gently fold the melted chocolate  into the aquafaba mixture until it is fully incorporated.

Divide the chocolate mousse into individual serving dishes and refrigerate until set before serving, about 1 hour.

Notes

You can add 2-3 drops of vanilla extract to enhance the flavor of the chocolate.
