Vegan dark chocolate mousse

A vegan dark chocolate mousse made with aquafaba is a delicious and guilt-free dessert that will satisfy any sweet craving. 3⁄4 c aquafaba (no salt or low salt)
1 t lemon juice (optional)
3⁄4 c chocolate (chopped dark chocolate)
1⁄2 c sugar (white sugar)


Melt the chocolate bits in a double boiler or microwave, Let them rest.

In a large bowl, whisk the aquafaba, sugar, and lemon juice, if using, until the mixture forms stiff peaks.

Gently fold the melted chocolate  into the aquafaba mixture until it is fully incorporated.

Divide the chocolate mousse into individual serving dishes and refrigerate until set before serving, about 1 hour.

You can add 2-3 drops of vanilla extract to enhance the flavor of the chocolate.
