Tarator

This is the sauce made with yogurt and nuts and served in Turkish cuisine with fish, especiallly fried squid,

Ingredients

3 slices bread (white bread, crust removed)
1⁄2 cup yogurt (natural yogurt)
2 cloves garlic (or to taste, peeled and crushed)
6 tablespoons olive oil
1 lemon (juice only)
1⁄2 teaspoon salt
  pepper (optional, freshly ground black pepper)

Instructions

  1. Place bread, yogurt, hazelnuts, and crushed garlic in a container suitable for the hand blender, or in the bowl of your food processor. Process until a smooth paste has formed.
  2. Will still blending, pour the oil in a thin stream, as in mayonnaise, to get an emulsion.
  3. Add the lemon juice and salt, and mix.
  4. Serve at room temperature or chilled.

Notes

If the sauce is too thick, add a little more olive oil, yogurt, lemon juice, or just water.

You can prepare tarator byt hand, with mortar and pestle. In that case, soaking the bread in yogurt and it will be easier to make it into a paste.

You can use the kind of nuts at hand. This sauce is often made with walnuts which can taste bitter. Hazelnuts or almonds usually have a sweeter taste.

Season with a little black pepper, if you must, freshly ground.
