Spicy couscous

Couscous is quick and easy to prepare. As pasta, you can flavor couscous in a myriad of ways. Mixed with beans or a little meat, a couscous dish serves as a whole meal.

Ingredients

1⁄2 teaspoon cooking oil
2 scallion (chopped)
1 pepper (red sweet pepper, seeds removed and chopped)
1 clove garlic (finely chopped)
2 tomato (chopped)
1 zucchini (diced)
1 cup chickpeas (garbanzo beans, cooked)
1 cup water (boiling)
1⁄4 teaspoon salt
2 tablespoons parsley (fresh, chopped)
1⁄4 teaspoon curry (powuder)
1 pinch cinnamon (ground)
1⁄2 teaspoon ginger
1 cup couscous

Instructions

  1. In a medium-size skillet, heat the oil.
  2. Add green onions, sweet pepper, garlic, tomatoes and zucchini. Sauté 5 minuntes, stirring.
  3. Remove from heat and keep warm.
  4. In a medium-size saucepan, combine the remaining ingredients .
  5. Mix, cover and let stand 5 minutes, until liquid is absorbed.
  6. Add the first mixture and fluff with a fork.

Notes

This recipe can be really hot if you add extra spices.

Couscous can be substitued with quick cooking rice, although the amount of water should be increased and you will need to go on to boil the rice as it will not cook with the steam.
