Spicy chili squid

Vietnamese spicy chili squid is a classic seafood dish that packs flavor and heat. It’s easy to prepare and can be served as an appetizer or main course.

Ingredients

1 lb squid (defrosted if frozen, rinsed, cuti int rings or strips)
4 c vegetables (broccoli florets, baby corn, bell pepper, bamboo shoot, mangetout)
5 clv garlic (peeled, minced)
2 chili pepper (dried, soaked, minced)
1 T sugar (or to taste)
1⁄4 c vinegar (rice vinegar)

Instructions

Heat 1 tablespoon of oil in a large pan over medium-high heat.

Add the squid and stir fry for 2 minutes, or until lightly browned.

Add the vegetables and stir fry 1 minute and then add the minced garlic and chili. Cook for 1 minute more.

Reduce the heat to low and add the minced garlic, chili peppers, fish sauce, sugar and rice vinegar. Stir together until all ingredients are combined.  

Simmer for 8-10 minutes, or until the squid is cooked through and the sauce has thickened.

Serve with warm.

Notes

Dried chili should be soaked in hot water for 20 minutes, then minced. If you don’t have access to dried chili peppers, you can use fresh chili peppers or a tablespoon of chili garlic sauce instead.

Vietnamese spicy chili squid is best served with steamed rice or noodles. It can also be enjoyed as an appetizer on its own or accompanied by other dishes.

For an extra kick of heat, add more chili peppers or a few drops of hot sauce to the dish. You can also substitute squid for shrimp or other types of seafood.
