Kabssah is a comforting Saudi meal, packed full of flavorful ingredients, mainly rice and meat.
In a pot, cook the onions in the oil until they become translucent, then add the garlic, tomato paste, tomatoes, salt, pepper and spices.
Cook until the sauce thickens before chucking in the chicken halves for a few minutes.
Cover the chicken in water so it is completely under and cook on a low heat until it is tender, 40-50 minutes.
While the chicken is cooking, wash the rice and soak it in cold water fro 30 minutes. Heat the broiler.
When the chicken is done, take the chicken halves out and put them in a roasting pan. Cook them in the oven until golden brown.
Drain the rice and add put it in the pot with the chicken broth. Boil on a high heat until there is only a little liquid left. Cover and cook for a further 10 minutes.
Remove the pan from the heat, put the rice in a serving tray and top with the chicken, cut into pieces. Serve warm.
It fhere is too much liquid in the pan, take out some broth before adding the rice. Reserve it to use with another dish.
Serve with a green salad or a yogurt salad.
Other vegetables can be addes to the rice.
Kabssah can be made with other types of meat, such as lamb, goat, camel, even beef.
