Rice with almonds and raisins

Serve rice with almonds and raisins recipe as a side dish for an Egyptian themed dinner. White rice is often flavored with nuts and raisins to give it variety. Ghee is the cooking fat of choice for this rice dish.

Ingredients

1 1⁄2 cups rice (long grain rice, washed)
2 tablespoons ghee (or other cooking oil)
2 1⁄2 cups water (or broth)
1⁄2 cup almond (blanched, skin removed)
1⁄2 cup raisin
  seasoning (to taste)

Instructions

  1. Heat ghee in a pan and cook rice for 15 minutes, stirring continuously.
  2. Add liquid, salt and cinnamon. Bring to the boil.
  3. Lower heat and cook until rice is done and liquid dried out.
  4. Roast almonds and raisins in a separate pan with a little butter. Sprinkle over the rice.

Notes

Ghee is clarified butter. If you don't have it, substitute 2 Tbs ghee with 2 Tbs unsalted butter.
