Orange flavored fig jam
Use this fig jam as a spread, to sweeten your morning cereal or a as a base for a dessert sauce.
Ingredients
1⁄2 cup water
3 tablespoons orange juice
1 teaspoon lemon juice
1⁄2 cup sugar (sugar with added pectin)
125 grams fig (dried figs, clean)
1 tablespoon liquor (optional, orange flavored liquor)
Instructions
- Bring figs and water to the boil over a medium heat in a stainless steel saucepan. Reduce heat and simmer for 15-20 minutes, stirring frequently, until figs are soft and cooked through. Transfer to a blender and puree until smooth.
- Put the pureed figs into a saucepan; add orange and lemon juice. Bring to the boil again and add the sugar.
- Cook over high heat for 1-2 minutes, stirring continuously. Stir in orange flavored liqueur and turn heat off.
- Ready to eat once cooled down.

Notes
This recipe can be prepared in larger quantities and canned. The suggestion is to scale it six times to make six 8 oz jars of fig jam. Process each jar for 10 minutes in a pressure canner.
