Miso soup

The warm embrace of Japanese tradition.

Ingredients

4 cups broth (dashi)
3 tablespoons miso (white or red miso paste, depending on preference)
1 cup tofu (cubed)
2 leaves seaweed (dreied wakame, rehydrated)
4 onion (green onions, finely chopped)

Instructions

Heat the dashi in a pot until it's almost boiling.

In a separate bowl, mix the miso paste with a little warm dashi to thin it out.

Add the thinned miso mixture to the pot, stirring well.

Add tofu and wakame to the soup.

Serve hot, garnished with green onions.
