Mint sauce

In England this is the sauce traditionally served with lamb, roasted, grilled, or boiled.

Ingredients

1 bunch mint (fresh leaves, finely chopped)
2 tablespoons sugar (fine, brown sugar)
4 tablespoons water (boiling)
3 tablespoons vinegar (or to taste)

Instructions

  1. Put mint and sugar in a bowl, pour over the boiling water. Let it stand until cold, or for about 30 minutes.
  2. Mix in the vinegar.

Notes

Malt vinegar is the most used in England, but white wine vinegar works just fine. Other interesting variations can be created by using other types of vinegar, such as cider or balsamic vinegar. If using balsamic vinegar, add less sugar.

A more intense mint flavor can be obtained by crushing the mint with the sugar, using mortar and pestle, instead of chopping the leaves. Let it stand for the full 30 minutes and omit the boiling water.
