Mediterranean style baked fish

Baked fish with Mediterranean vegetables is absolutely delicious and healthy. This recipe is packed with flavor. Use cod, haddock or other white fish.


4 pce fish (fish fillets, clean)
1⁄2 c tomato (cherry tomatoes, halved)
1⁄4 c olives (Kalamata olives, pitted and sliced)
1⁄4 c cheese (Feta cheese, crumbled)
1 t oregano (dried oregano)
  seasoning (salt and pepper to taste)


Preheat the oven to 350°F.

Arrange haddock in a baking dish. Drizzle with olive oil and season with oregano, salt, and pepper.

Scatter tomatoes, olives, and feta cheese around the fillets.

Bake for 15-20 minutes, until the fish is cooked through.

Serve straight away.
