Irish potato salad with apples

The Irish version of a potato salad and most simple: boil, mix and chill. Something to try.

Ingredients

2 lb potato (red potatoes, halved)
1 onion (white, diced)
5 celery (diced)
1 bn scallion (chopped)
1 c apple (green apples, diced)
1 bn parsley (finely chopped)
  seasoning (salt and pepper to taste)
1⁄2 c vinegar (cider vinegar)

Instructions

Boil potatoes until tender, not mushy. Strain and allow to cool.

Chop the potatoes, mix in all the ingredients in a salad bowl and chill before serving.
