Ho t'ao chi ting (walnut chicken)

A delicious sample of oriental cooking. Walnut chicken is surely to be liked by everyone.

Ingredients

1 cup onion (cut)
3 tablespoons cooking oil
2 cups walnut (shelled, about 1/2 lb walnuts)
1 pound chicken ( boneless and skinless meat, cut into cubes)
3⁄4 teaspoon salt
1 cup bamboo shoot (cut into cubes)
1 cup celery (cut)
2 tablespoons cornstarch
3 tablespoons soy sauce
2 tablespoons wine (rice wine or dry sherry)
1 teaspoon sugar
1⁄4 cup broth (best chicken broth)

Instructions

  1. Cube the bamboo shoots, celery, onion, and water chestnuts.
  2. Sauté slightly in oil. Remove from the pan.
  3. Brown walnuts, blanched in deep oil, remove and drain.
  4. Dredge uncooked chicken, cut into cubes, with salt, corn starch, soy sauce, sherry and sugar.
  5. Heat pan, add 3 tablespoons oil and sauté the dredged chicken until tender.
  6. To the chicken, add the soup stock, heat thoroughly.
  7. Distribute food on a serving tray. Serve hot.

Notes

If you want to get rid of the bitterness of the walnuts. cover them in cold water and boil for 3 minutes. Drain immediately.
