French garlic vinaigrette

A French vinaigrette is a simple yet elegant salad dressing. This recipe is very easy.

Ingredients

1 clove garlic (finely chopped)
1 teaspoon salt
3 tablespoons vinegar (red wine vinegar)
1 pinch pepper (freshly ground)
6 tablespoons olive oil

Instructions

  1. Place chopped garlic in the mortar and mash it lightly then add the salt and pepper. Mix.
  2. Stir in vinegar until salt has dissolved.
  3. Add olive oil and whisk until well blended.

Notes

Alternatively, crush the garlic the back of a spoon in a small bowl and place the crushed garlic, salt, pepper and vinegar in a small jar with a tight-fitting lid and shake until salt is dissolved. Then add oil, screw lid and shake again until well blended.

The original recipe will yield enough dressing for 4-6 portions.

A basic vinaigrette lends itself to multiple variations.
