Diabetic stuffed green peppers

A very low sugar recipe, suitable for a diabetic diet and also for aweight loss diet.

Ingredients

12 ounces beef (lean beef, ground)
1 onion (small, chopped)
1 can beans (red kidney beans, 15.5 oz can, drained)
1 can tomato paste (6 oz can)
1 can tomato (diced tomatoes with green chili, 10 oz can)
3 bell pepper (green, large)
2 tablespoons cheese (grated Cheddar)

Instructions

  1. Brown ground beef.
  2. Add onions and cook until tender, stirring only occasionally.
  3. Stir in the red kidney beans, tomato paste, and diced tomatoes. Heat to boiling. Reduce to low heat and simmer 10 minutes.
  4. Wash green peppers and cut in half lengthwise. Remove seeds. Place green peppers cut side up in large skillet. Pour in about 1/2 inch water. Bring to a boil, cover and reduce heat. Simmer about 5 minutes until crisp tender.
  5. Remove peppers from water and drain, using a towel. Place cut side up on serving plate, and fill with ground meat mixture. Top with a mere sprinkle of cheddar cheese.
