Crema Catalana

An import from the Catalan region of Spain, this creamy dessert is easy to prepare and even easier to eat. Delicious.

Ingredients

4 cups egg yolk
2 ounces milk (and some more to burn on top)
5 sugar (and some more to burn on top)
  teaspoon lemon zest (1 strip)
1 tablespoon vanilla extract

Instructions

  1. Fetch a saucepan and pour in the milk, then add the lemon rind, vanilla extract and cinnamon.
  2. Bring to a boil and simmer for a few minutes.
  3. Whisk the egg yolks vigorously, pouring in the cornstarch and five ounces of sugar.
  4. Keep it up until the mixture is thick. Then pour it over the milk, stirring well.
  5. Heat to thicken, and simmer for 3 minutes.
  6. Pour into individual containers and then allow to cool. Refrigerate for a few hours.
  7. Before serving, sprinkle sugar on top and burn it.

Notes

Burn the sugar with a kitchen torch or in the oven, under the grill, for 10 minutes.
