Crema Catalana
An import from the Catalan region of Spain, this creamy dessert is easy to prepare and even easier to eat. Delicious.
Ingredients
4 egg yolk
4 cups egg yolk
2 ounces milk (and some more to burn on top)
5 sugar (and some more to burn on top)
teaspoon lemon zest (1 strip)
1 tablespoon vanilla extract
Instructions
- Fetch a saucepan and pour in the milk, then add the lemon rind, vanilla extract and cinnamon.
- Bring to a boil and simmer for a few minutes.
- Whisk the egg yolks vigorously, pouring in the cornstarch and five ounces of sugar.
- Keep it up until the mixture is thick. Then pour it over the milk, stirring well.
- Heat to thicken, and simmer for 3 minutes.
- Pour into individual containers and then allow to cool. Refrigerate for a few hours.
- Before serving, sprinkle sugar on top and burn it.

Notes
Burn the sugar with a kitchen torch or in the oven, under the grill, for 10 minutes.
