Crab cocktail
Crab cocktail is a great appetizer - - because it looks delicious and is colorful, light and served cold.
Ingredients
1 3⁄4 cups crab (cooked and flaked)
2 cups lettuce (Romaine or Cos lettuce, shredded)
1⁄2 cup tomato ketchup (tomato ketchup)
1⁄2 cup horseradish (horseradish sauce)
2 tablespoons orange juice
1⁄4 teaspoon salt
1⁄2 teaspoon sugar
2 teaspoons mustard (prepared)
Instructions
- Process all ingredients for the sauce - ketchup, horseradish sauce, orange juice, salt, sugar, and mustard - in the blender. Transfer to a bowl and chill until needed.
- Check the crab meat to remove any remaining bits of shell. Chill.
- To serve, arrange the shredded lettuce in seafood cocktail cups, distribute the crab meat on top and spoon some sauce over the crab, 2-3 Tbs should be enough.

Notes
If you don't like it so spicy, try mayonnaise or one of its variations.
For a quick thousand islands sauce, substitute horseradish sauce with the same amount of mayonnaise and omit mustard.
