Conch fritters (Bahamian style)
These crispy, golden bites combine tender conch meat, aromatic spices, and a touch of heat. Each fritter delivers a satisfying crunch followed by savory, melt-in-your-mouth goodness.

Put the batter in a bowl. Mix conch and chopped vegetables into the batter. Form balls 1-2 inches size. Those are the fritters.
Heat oil in a deep skillet to 375ºF. Drop tone fritter at a time into the skillet, and wait a few seconds before adding other and don´t crowd the skillet (to prevent the oil cooking too much)
Fry until golden brown on all sides, 3-5 minutes, turning the fritters as they rise to the surface.
Remove from the skillet, draining well the oil, and rest on absorbent paper for a couple of minutese. Serve warm accompanied with a dipping sauce.
Notes
Conch is a large marine snail found in warm, tropical waters, especially in the Caribbean and the Bahamas. If you don´t have conch, you can susbtitute for the same amount of abalone, clams, scallops or whelk. Squid has a similar texture to conch, as well.
Paired with a tangy dipping sauce, this Bahamian classic is perfect as an appetizer, snack, or a tropical touch for your gatherings.
Key lime and mustard sauce
Combine 1 cup mayonnaise. 1 tablespoon Dijon mustard and 1/3 cup Key lime juice. Season with salt and pepper to taste. Serve with seafood or as a dip.
Variations
Substitute conch with chopped fish, squid, ham or meat.
