Cod baked in milk

Ingredients

2 c milk (warm)
6 t butter (can be melted butter)
2 lb cod (cod fillets, without bones or skin)
1 t salt (or to taste, kosher salt)
  parsley (optional, fresh parsley for garnishing)

Instructions

Preheat the oven to 350° F and grease the pan with butter or lightly spray a baking dish with non-stick spray.

Arrange fillets, placing them close together in the pan. Pour enough hot milk over fish to barely cover fillets.

Place on teaspoon butter on top of each fish fillet.

Bake for 20-25 minutes or until done.

Garnish with fresh parsley before serving.

Notes

Choose a shallow baking pan in which fish fillets will fit tightly.

Ad just enough milk to barely cover the fish.

The cod is ready when the fish is opaque and flakes easily with a fork.

If using frozen cod fillets, thaw before cooking.
