Chicken with 40 cloves of garlic

Chicken wiht 40 cloves of garlic, a classic recipe for the oven that comes out just as good from the slow cooker, or crock pot.

Ingredients

1 chicken (3 lb roasting chicken, giblets removed and ready to cook)
40 cloves garlic
1 cup broth (chicken broth)
  seasoning (salt and pepper to taste)

Instructions

  1. Place the 40 cloves of garlic in your crock pot. Season the chicken with salt and pepper and lay it on top of the garlic.
  2. Pour the broth over the chicken.
  3. Cover and cook in the low setting for 6-8 hours.
  4. To serve, slice the chicken and transfer to a serving plate. Squeeze the soft, cooked garlic into a small bowl - no skin - and serve on the side, as a spread, with toasted bread

Notes

This is a great recipe for busy families: Little preparation required and it cooks unattended.

You can roast the chicken with the 40 cloves of garlic, adding a little chicken broth to keep it moist, and you will get a similar result. The roast chicken version is a product of French cuisine, while the slow cooker version is an American adaptation.
