Caramelized garlic
Caramelized garlic is very simple to make. You can use this condiment with roasted meats or poultry as well as your roasted corn.
Instructions
- Blanch garlic in boiling water for about two minutes. Remove with a slotted spoon or ladle and place in a bowl of cold water to stop the cooking.
- Remove cloves from the water and drain on layers of paper towels.
- Place the sugar in a small, heavy {cast iron} skillet and add 2 tablespoons of the vermouth. Heat on a medium heat.
- Cook until the mixture turns a golden color, swirling the mixture by tipping the pan to insure even cooking. Adding water 1 tablespoon at a time, swirling the pan to incorporate the liquid.
- Toss in the garlic and cook until well coated and the garlic is soft but still keeps it's shape.
