Caramelized garlic

Caramelized garlic is very simple to make. You can use this condiment with roasted meats or poultry as well as your roasted corn.

Ingredients

1⁄2 cup sugar
2 tablespoons vermouth
2 tablespoons water
1⁄2 cup garlic (fresh, peeled garlic cloves)
2 tablespoons butter (unsalted)

Instructions

  1. Blanch garlic in boiling water for about two minutes. Remove with a slotted spoon or ladle and place in a bowl of cold water to stop the cooking.
  2. Remove cloves from the water and drain on layers of paper towels.
  3. Place the sugar in a small, heavy {cast iron} skillet and add 2 tablespoons of the vermouth. Heat on a medium heat.
  4. Cook until the mixture turns a golden color, swirling the mixture by tipping the pan to insure even cooking. Adding water 1 tablespoon at a time, swirling the pan to incorporate the liquid.
  5. Toss in the garlic and cook until well coated and the garlic is soft but still keeps it's shape.
