Steak, Guinness and kidney pie

This recipe is delicious served with potato mash to soak up the sauce, and a side of your choice of vegetables.

Ingredients

1 cup kidney (veal or beef kidney, cored and diced)
1 pound beef (diced stewing steak)
3 tablespoons flour
2 tablespoons butter (or 3 Tablespoons olive oil, healthier)
1 onion (medium size, peeled and sliced)
1 1⁄2 cups beer (Guiness or dark ale)
1⁄2 cup broth (beef broth)
1 cup carrot (peeled and sliced)
8 ounces pastry (shortcrust pastry)
1 egg (beaten)
1 teaspoon salt (ot to taste)
3⁄4 teaspoon pepper (or to taste, black pepper)

Instructions

Place kidney, diced steak, flour, salt and pepper into a bowl and mix until meat is coated.

Heat oil in a large pan. Add onion and flour coated meat. Cook until meat changes color, stirring frequently.

Add Guiness and beef broth. Bring to the boil, cover and simmer for 1 hour, stirring occasionally to prevent it sticking to the bottom of the pan.

Add carrots to the pan and simmer for 25-30 minutes longer.

Preheat oven to 425F (220).

Roll out pastry on a lightly floured surface. Cut out 4 round pie tops -or the shape of the serving dish. Knock up the edges and make a lattice pattern on the top.

Arrange the tops on a baking sheet an bake for 20 minutes until risen and golden brown.

Adjust seasoning of the steak, ale and kidney mixture and spoon into serving dishes.

Top each dish with one pie crust and serve.

Notes

Substitute veal or beef kidney with lamb, if you prefer.

  • To season and coat the meat, place kidney, meat, flour, salt and pepper into a plastic bag, close and shake a few times. The meat will be coated and seasoned to perfection.
  • Pour the remaining gravy into a sauce bowl.
  • Make individual steak, Guiness and kidney pies with the same filling but double the pastry and cut a pie bottom and a top.

If you don't have it, substitute Guinness with your favorite stout, or your favorite beer.
