Boiled yams with a sweet glaze
Yams are a vegetable that may look similar to sweet potato, but it is a different plant altogether and tastes sweeter.

- In a large skillet, bring 1 inch of water to a boil. Add yams. Cover and simmer for 20 minutes or until they are tender. Drain.
- In a small bowl, mix orange peel, orange juice, brown sugar, salt, cinnamon and allspice. Pour over yams in skillet. Cook and stir until bubbly.
- Simmer, uncovered, for 5 minutes, spooning sauce over yams occasionally to make a glaze.
Notes
Yams are healthy because they are low in saturated fat and sodium but high in potassium. This helps to maintain a healthy mineral balance and protects the heart.
Real African yams are actually toxic if eaten raw. Yams need to be thoroughly cooked as they have natural toxins that must be removed to be safe to eat. In Africa, preparation involves pounding, washing and boiling, to eliminate any harmful substance, before turning the pounded yam into a dough.
