Bellini cocktail
A Bellini is one of Italy’s most elegant sparkling cocktails. Light, fruity, and beautifully simple, it blends peach purée with chilled sparkling wine for a drink that feels festive without being fussy. It is a natural choice for brunch, summer gatherings, or any occasion that calls for something bright and celebratory.

To make the peach purée, cut the peaches into pieces and place them in a blender or food processor. Add the lemon juice and blend until smooth. Taste the purée and add the sugar only if the peaches need a little extra sweetness.
For a smoother Bellini, press the purée through a fine sieve. This step is optional, but it gives the drink a more polished texture.
Divide the chilled peach purée between 2 champagne flutes or sparkling wine glasses.
Slowly top each glass with chilled Prosecco. Pour gently so the bubbles stay lively. Stir very lightly once or twice to combine.
Serve immediately while cold and sparkling.
Notes
Use white peaches if possible: Traditional Bellinis are often made with white peaches, which have a delicate sweetness and soft floral flavor.
Chill everything well: Cold purée and cold sparkling wine make a fresher, brighter drink.
Choose a dry sparkling wine: Prosecco is the classic choice, but other dry sparkling wines work well too.
Variations
Try a fruit variation: Nectarines or apricots can be used for a different but equally delicious twist.
Make it alcohol-free: Use chilled sparkling water or a non-alcoholic sparkling wine in place of the Prosecco.
Serve with brunch: Bellinis pair especially well with light breakfast and brunch dishes, from pastries to egg dishes and fresh fruit.
