Baked sliced potatoes

This a very flavorful way to serve Idaho potatoes, sliced and baked with herbs and cheese.

Ingredients

6 potato (medium sized baking potatoes, washed, peeled and sliced)
2⁄3 c butter (melted)
1 t salt
1 1⁄2 t thyme (dried thyme)
1 t basil (dried basil)
1 t parsley (dried parsley)
2⁄3 c cheese (optional, shredded Cheddar cheese)
  cooking oil (vegetable oil cooking spray)

Instructions

Heat oven to 425º F. Spray the inside of a baking dish with vegetable cooking spray.

Arrange the potato slices in the baking dish. Drizzle the melted butter over the potatoes. Sprinkle with the salt and herbs.

Bake the potatoes until tender, about 60 minutes.

Remove the dish from the oven. Sprinkle the cheese on top of the potatoes (if using) and put the dish back in the oven.

Bake 15 minutes more, or until the cheese melts and bubbles.

Serve warm.

Notes

For more flavor, sprinkle 2-3 tablespoons grated Parmesan together with the Cheddar cheese.

To make them healthier, use less cheese and top with roasted peppers or sun dried tomatoes.

Variations

Decorate the baked potatoes with herbs, fresh or dried, and spices, like paprika o pink pepper.

Vary the herbs and spices. Chives go very well with dairy and baked potatoes.
