Baked parsnips

Baked parsnips, an honest Irish side dish.

Ingredients

2 tablespoons butter
1 cup broth (beef broth)
  seasoning (salt, pepper and nutmeg)
2 1⁄2 pounds parsnip

Instructions

Peel and quarter the parsnips and boil for 15 minutes but do not let them cook completely (par-boil).

Place in a large dish and add the Beef Stock , salt, pepper and nutmeg as required.

Spread with butter and cook for 30 minutes on a lowish oven heat.

Notes

As a variation, sprinkle grated Parmesan cheese over the parsnips before baking them. The cheese will make a golden crust that may not be very Irish but it is very appetizing.
