Apple ketchup

There is such a thing as apple ketchup and here is the recipe.

Ingredients

12 apple (tart apples, peeled, cored and quartered)
2 cups vinegar (cider vinegar)
2 onion (grated)
1 cup sugar
3 teaspoons salt
3 teaspoons cinnamon (ground)
1 teaspoon mustard (dry mustard)
1 teaspoon clove (ground)

Instructions

  1. Place apples into a heavy bottom pot, with just enough water to cover, and simmer until soft. Do not add more water, allow to evaporate.
  2. Push apples through a food mill. Rinse pot, measure 1 quart of pulp and return apples to pot and add the remaining ingredients. Bring to just a boil, reduce heat and simmer uncovered, for at least 1 hour.
  3. Pour into jars. Process in a hot water bath for 10 minutes for your pints, or allow to cool and refrigerate.

Notes

Goes well with: Onion rings, Pork.

If you obtain more than 1 quart apple pulp, increase the remaining ingredients in proportion, i.e. 2 quarts of apple pulp would require to double the amounts of vinegar, onion, and condiments given.
