Mushroom sauce meatballs with mashed sweet potatoes
This meatballs with a mushroom and sweet potatoes recipe is the winner of the All Foods Natural autumn 2007 recipe competition. Participants had to be creative with mushrooms, and this is the result.

Instructions
- Boil water in a large pot and cook sweet potatoes until tender. Drain water. Using a potato masher, mash sweet potatoes. Add vegetable broth until potatoes reach desired consistency.
- Heat the vegetable meatballs in a skillet and cook until warmed through. Add mushrooms and saute 3 minutes until tender and releasing juice. Add thyme and stir to coat. Add remaining vegetable broth and simmer 3 minutes, until warm.
- Dissolve cornstarch in sherry and add to skillet. Simmer 1 minute, until sauce thickens. Spoon sweet potatoes on a plate and top with meatballs. Spoon mushroom sauce over top and serve.
Notes
Use vegetarian meatballs for a vegetarian diet, otherwise use turkey, pork, or beef meatballs, as preferred.

Use vegetarian meatballs or falafels and vegetable broth.

When we entertain friends... my husband enjoys grilling so we will usually do that when we have company. My husband likes to grill skirt steak and I make a broccoli and pine nut casserole or scalloped summer squash. For dessert, I'll make a cobbler or flan.
